Cooking Fool

Before Willie got here, I was eating Trader Joe's frozen food. Fast, easy, delicious. But with the garden exploding in fresh produce, I have been trying to find new ways to cook tomatoes and zucchini. This week I decided to make my own version of stuffed zucchini. I talked to Bill and he said by all means, take anything I wanted out of the garden...please!

I laughed out loud when I went outside and found this zucchini!


I had decided to stuff it with organic wild rice, bought in bulk at Whole Foods,


I would add some tomatoes, but I also made caprese with the cherry tomatoes.


Some yummy roasted garlic chicken sausage plus fresh garlic,


and pine nuts,


The zucchini was too big to use all of it, so I opted for zucchini bowls.


Pine nuts, garlic and sausage sauteed nice and brown.


I mixed this with the rice, filled the zucchini, topped with Mozzarella cheese and baked in the oven for about an hour. Delicious! I was even impressed with myself.


The caprese was easy. I got some good buffalo mozz from Whole Foods, added the cherry tomatoes and Maryke's basil plus a splash of olive oil. I have been eating this all week.


Willie has also been doing alot of cooking. While we were at the cabin in Tahoe, the subject of eating as children came up. I told him about Hamburger Helper and he told me about all the things he ate growing up. One thing was fried cabbage and bacon. He made it one day last week and I just had to have it again - it was so simple, but so delicious.
